The problem with these is that I could eat them all in one sitting… or sometimes I eat the mixture before I even get to shape them into little balls!! (what a terrible problem to have!)
These protein-packed balls are the easiest thing to throw into your handbag when you’re on the run or they are perfect to bring onto a short flight when you wanna avoid aeroplane food!
They are my go to with a cup of tea when I’m craving the naughties!

Okay, lets shape some balls!!
Ingredients
1 cup medjool dates (chopped)
1 cup almonds
1/4 cup any other nut (I used walnuts)
1/4 cup any other nut (I used pistachios)
1/4 cup desiccated coconut (+ some for rolling)
1 tablespoon raw cacao powder
1 tablespoon protein powder
2 tablespoons coconut oil
2 tablespoons coconut butter (this is the shit!)
Method
Throw your nuts into the food processor. Blitz briefly to keep some rough chunks of nuts (this is my preference, or you can blits till you create more of a nut powder) Put in large bowl.
Add the rest of the dry ingredients to the bowl and mix together.
Chop the dates up into fine pieces (don’t forget to remove stones!) Scatter around the large bowl
Melt coconut butter and coconut oil briefly together in the microwave. (obviously, this depends on what temp it is where you are living, they might be melted already.) Pour evenly over ingredients in the bowl.
Mix all ingredients with a spoon.
Now get your hands dirty! Shape into balls, and pop in the fridge to harden!
Notes
* use whatever nuts are in your cupboard/whatever your heart desires!
* you can throw all this into a food processor, or you can chop everything up by hand for a more rustic look. Personally, I like chopping up the dates and walnuts by hand. And blitzing the almonds so that there are still a few chunks left. My favourite thing about biting into rustic energy balls is that there can be a surprising crunch of half an almond or a nice big chunk of a date.
